Hello Laura,
Color issues could be related to the actual state of software you have. PDF Light Viewer plugin is heavy dependent on the two libraries for images manipulation: ImageMagick and GhostScript. Usually to import PDFs created in the latest versions of Adobe software (or others) you’ll need to have latest versions of the GhostScript and ImageMagick.
For now please share your PDF for tests if possible. Also please let me know what versions of ImageMagick and GhostScript do you have. You can check versions on the plugin’s settings page /wp-admin/options-general.php?page=pdf-light-viewer
